Dragons fire up their challenge

The South Wales culinary team head off to North Wales for this month's Battle for the Dragon competition in good spirits after testing their menu on 80 discerning diners at a special trial dinner.

The South Wales team – which features four Celtic Manor chefs and two who used to work at the Resort – will compete against rival cooks from North and Mid Wales in the event proper at Coleg Llandrillo, Rhos-on-Sea, from February 25-27. 

They decided to warm up by firing up the ovens in Rafters Restaurant of the Twenty Ten Clubhouse and trialling their dishes on diners who included a number of fellow culinary experts and special guests like former Wales rugby captain Martyn Williams.

The starter of Pembrokeshire Lobster and Poached Mackerel, main of Usk Valley pork and chocolate and ale truffle dessert went down very well on the night but the chefs are still anxious to perfect the menu after inviting feedback from their audience

The hotly-contested Battle for the Dragon is part of the Welsh International Culinary Championships, when young Celtic Manor chefs will also be competing in the junior categories during a mouthwatering three-day showcase of world class chefs from across the UK.
